These bright pinwheel cookies will add colour to any birthday party, you can use whatever colours you like. The are super yummy and a great treat!

  • 250g butter, softened
  • 1 1/3 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups plain flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • food colouring, optional
  • sprinkles, optional


  • Step 1
    In a stand mixer, beat the butter and sugar for a few minutes until light and fluffy.
  • Step 2
    Add the eggs on at a time, beating between each addition. Add the vanilla and beat again.
  • Step 3
    Add the flour, baking powder and salt and mix again until the mixture begins to form a dough.
  • Step 4
    If you are using food colouring add it at this stage, dividing the dough if using more than one colour.
  • Step 5
    Knead the dough lightly, before wrapping in cling wrap and placing in the fridge for half an hour.
  • Step 6
    Roll out each colour of dough to around 3mm thickness.
  • Step 7
    Place the dough one on top of the other, flattening slightly with a rolling pin.
  • Step 8
    Roll the dough into a log, rolling in sprinkles at this stage if using them.
  • Step 9
    Cut the dough into rounds, and place them on a lined baking tray.
  • Step 10
    Bake at 160c for 12-15 minutes, watching carefully to avoid too much browning.
  • Step 11
    Remove cookies when they are just cooked and still pale.
  • Step 12
    Allow to cool before serving.
