Cranberry, Pistachio and White Chocolate Fudge Recipe

  • 400g of white chocolate
  • 1 can of condensed milk
  • 80g of pistachios
  • 80g of dried cranberries

Method

  • Step 1
    Line the base and sides of a 20cm square cake tin with baking paper.
  • Step 2
    Break the white chocolate into pieces and place into a small saucepan.
  • Step 3
    Add the condensed milk and cook over a medium heat for 10 minutes, stirring regularly until the white chocolate has melted and the condensed milk and chocolate have combined.
  • Step 4
    Reduce the heat and add the cranberries and pistachios and combine.
  • Step 5
    Remove the saucepan from the heat and quickly (and carefully) pour the mixture into the lined cake tin.
  • Step 6
    Place the tin in the fridge for four hours or until set.
  • Step 7
    Remove the fudge from the tin and cut into small pieces
  • Thermomix Method:
  • Step 1
    Line the base and sides of a 20cm square cake tin with baking paper.
  • Step 2
    Break the white chocolate into pieces and place in the bowl.
  • Step 3
    Add the condensed milk and cook for 10 minutes, 100 degrees, speed 3.
  • Step 4
    Add the dried cranberries and pistachios and mix for 20 seconds, reverse, speed 1.
  • Step 5
    Quickly and carefully pour the mixture into the lined cake tin.
  • Step 6
    Place the tin in the fridge for four hours or until set.
  • Step 7
    Remove fudge from the tin and cut into small pieces.
