The kids love these mini pancake muffins. You can add whatever flavours you like, we use fruits, chocolate chips and even honey.

  • Level

  • 260g self raising flour
  • 1 teaspoon sugar
  • 30g butter, melted
  • 2 eggs
  • 300ml milk
  • 1 teaspoon vanilla extract


  • Step 1
    Preheat oven to 180c. Put all ingredients in a stand mixer and beat until well combined.
  • Step 2
    Pour the pancake mixture into a 12 hole, or 2 x 6 hole, muffin tin. Top with any extras if you are using them. Bake for 12-15 minutes, or until the pancake bites have cooked through.
  • Step 3
    Let the pancake bites cool slightly before removing from muffin tin. Eat while still warm or at room temperature.
